My wife and I had the honour of securing a reservation at the Chef’s Table this past Saturday (March 12) At a price point of $225 a person +$85 for non alcoholic drink pairing package for this multi-course meal, let’s just say are expectations were very high. Restaurant Taniere in Quebec City is the epitome of delivering on locally sourced food and ingredients to its patrons. This close to 4hr dining experience wasn’t just a meal, but an experience that was a buffet for all the senses to feast on. The use of smoke, fire, lighting, spices, and sounds were absolutely astonishing. In all my years of dining, I have never experienced anything like this in my life that Taniere offers. I was impressed with the attention to detail in the preparation, presentation, and explanation of all the dishes. I was equally impressed by the attention to detail and presentation of the non alcoholic pairing drinks, as I was never left with the impression I was second rate because I didn’t choose the alcoholic drink package. This place didn’t disappoint and exceeded our expectations! Prior to making a reservation here I read previous reviews from other patrons. I want to address a couple of things. Someone said that after the meal they were starving, eating this multiple course meal I was more than full and couldn’t finish the dessert. It’s more than a enough food and you are literally eating for close to 4 hours from welcome drinks, snacks to dessert. Another person commented said they were disappointed that they couldn’t see them plating the food at the Chef’s Table. This is untrue, you can most definitely see the team plating the meals. I was able to even speak with Chef Francois who provide us with a tour of the kitchen, introduced us to some of his colleagues and explained further the process of the operations. Another person said the seats were uncomfortable at the chefs table. I found the chairs to be comfortable. You also have three different areas within the restaurant as you move through the various stages of the meal. I will post a lot of photos for this review, but really it doesn’t truly capture the full experience with all the emotions, feelings and memories created from actually going. A couple points for the owners I would install hand railings for the stairs as it will help everyone (given the low light especially at the entrance and exit) I don’t think it’s necessary to have to watch Jonathan sample all the wine he is serving right in front of us at the chefs table. For half the meal I thought he had a drinking problem and then realized he is probably just ensuring the wine quality before presenting, if this has to be done I understand, but perhaps not in the centre of the chefs table. Lastly for the personalized summary cards it would be nice if they reflected the date of the visit, ours said March 5 but the visit was March 12 Yes I did revise the reservation, but it would show true attention to detail if this was sorted for future patrons who make reservations. ( This didn’t ruin our night, just a suggestion to help the experience for patrons) Thanks to everyone at Taniere for the most memorable dining experience I have ever had!

So much had been written about this French restaurant in Quebec City, the heart of French Canada. I won’t rave as many reviewers do. We went to experience something different, and we weren’t disappointed. But there are caveats. There is no doubt that Taniere is a premiere example of a French restaurant combining the best elements of Haute and Nouvelle Cuisine. Exquisite presentation in a historic old and comforting environment. Detailed explanations of each course by a trained and dedicated staff. Extraordinary, enjoyable, and an experience well worth the time and cost. But yet---not the best my wife and I have experienced in our world travels. We still revel in and prefer classical cooking and presentation. I’ll only describe a few of the 14 courses in our meal. We started with an elderberry cocktail followed by 4 hors d'oeuvres centered on duck, walleye (fish), pig flank, and trout eggs. All were in Haute/Nouvelle portions which, we decided, could be sized by ‘bites’ (forgive us, we were having fun). Each hors d'oeuvre was one bite plus another for the accompaniment (like water pepper with the pork and immature catkins with the walleye). The seven ‘main’ courses ranged from ‘9 Shades of Tomatoes’ (9 combinations of different tomato types with spices and condiments-9 bites), to spruce grilled Arctic Char in a caramelized sauce (2 bites), to a 2 bite slice of Wagyu Beef with a sauce containing goldenrod and mushrooms (2 more bites). Dinner was followed by 2 dessert courses (6 bites total). The dinner from hors d'oeuvres to dessert took 3 hours and we were moved twice to a new location in the cellar restaurant (hors d’oeuvres lounge to the main dining room to the more casual dessert room). Nice effect to separate the three parts of the meal. The one downer in the presentation of the various dishes was the detailed and critical description of each. It may be unfair, but the description of each dish by our server was lost quickly at its rapid fire delivery in French-English. While a description of each course was provided to us in a menu we received after the meal was done, each course was stated in just a few words in that menu. A more detailed description, as told by our server, would have added to the educational value of the meal. Finally, the cost of the experience cannot be ignored. My wife’s and my meal, plus a bottle of wine, plus tip cost over $550. Had we opted for the wine pairing at we would have paid over $700. If you want to sit at a bar surrounding the chef and watch him prepare your food, add another $50 per person. Was it worth it? Yes, 4 stars for the food and 5 stars for the total experience.

Truly spectacular! One of the Top 3 dining experiences I've had in my life (tied with Michelin 2* Noor in Cordoba, Spain and slightly above 3* Akelare in San Sebastian). Atmosphere, food, wine pairing and service are all world-class and, frankly, unsurpassed. How lucky the people of Quebec City are to have Taniere for special occasion dining. Start with the atmosphere. One is given a secret pass-code to enter the restaurant which is unmarked on the outside. You're warmly greeted and immediately escorted to the 'cocktail lounge' where you get your first drinks and the amuse buche. It's underground in a 500 year-old stone cave with incredible lighting. From there, you're taken either to the dining room or, if you were lucky enough to get the reservation, to the 12-seat Chef's Counter which my daughter thought looked a bit like 'Dr Evil's lair' in a pre-dinner photo I shared. Dr Evil should have been so lucky, as the leather chairs are plush and perfectly situated to watch the chef's in action for the next several hours. Different staff members bring the courses out and describe their provenance and preparation. As much as possible is locally sourced from Quebec and the servers will relay stories of their time on fishing vessels, in the forests, etc. sourcing the ingredients. It's a wonderful and eclectic mix of ingredients. Preparation and presentation is 3* quality. There are two wine pairing levels and a non-alcoholic pairing option as well. While you can't go 'ala carte' on the food, you can on the beverages - one of my fellow diners described the types of cocktails he likes, and the mixologist brought him 2 or 3 (of varying styles on the theme) throughout the evening. I had the Collection pairing and thought what was picked complemented the food exceptionally well. I also enjoyed the non-alcoholic fruit juices (palette cleansers), cocktails and teas that were in the beverage line-up. Service is very professional, warm and inviting. Everyone was able to answer the questions asked of the food and beverages. The training and excitement of the staff to be part of Taniere comes through...and diners feel almost like they were given a special pass for dinner at an old friend's home for the evening. I've read some articles lately suggesting fine dining is dead. That hasn't been my experience in various foodie cities around the world and it certainly wasn't my experience at Taniere where a new, modern fine dining experience is being conceived and perfectly delivered. Just outstanding...one of the top restaurants in the world!

This was one of the adventurous foodie experience I have come across. Very exciting. The venue was fantastic, a historic building, a cellar, in the heart of Old Quebec, with access through a yellow door, no signage, just a code, which you receive the day before your reservation. Inside, we were greeted and sat in the first area, to enjoy pre dinner drinks and appetizers. The presentation was amazing and we enjoyed small plates of daring creations which were such a treat. At this point, we were offered the drink options which were premium wine pairings, the non-premium wine pairing and the non-alcohol drink pairing. We went with the non-premium, which is the only mistake we made, we should have taken the premium pairing as that was a bit of a disappointment for us. On to the next cellar, the main course, again, super exciting small plates, the tables with drawer and locks to hint on our next dish. So creative, local fish and lobster, sturgeon caviar from New Brunswick, lamb, I don’t want to give away the whole menu but the flavours…I was in my element. It was one adventure after the next, the dessert served in yet another area in the cellar, a brighter section tastefully decorated with birch trees. We then had a chance to chat with other patrons, who agreed, it was an experience they would never forget. Since we arrived home, we have told many of our friends about our adventure there, have showed pictures and the menu card. I had made my reservations months ago, when I made my hotel reservations. After research, Taniere seemed to top the list and I understand why. This is a must experience while in Quebec City.

Coming from a small town in the United States this restaurant is unlike anything my wife and I have experienced. The food, the presentation, the atmosphere is a special luxurious treat. Since the menu is seasonal and can change daily I will not review the food or provide photos as your experience will differ. What a magical experience it will be! The house staff are all very professional and explain each dish to tell a store of the local area. For those reading this review a few general things to keep in mind: 1. Dress is casual, while it is a fine dining restaurant you do not need to show up with coat and tie :) (Unless you want to) 2. Come hungry! You can expect at least 15 courses depending on your evening. If you are a picky eater you may want to think twice, as you will experience a wide variety of ingredients many will be unfamiliar to most people. 3. Plan for 2.5 to 3 hours at this establishment. The experience and background information is not to be rushed. 4. Beverages are an extra cost. My wife and I are mostly non drinkers so we selected the non alcohol pairing option. It was amazing how these drinks paired with the meal and how some tasted like their big brother version. 5. This is a quite pricey experience. It will be at minimum a few hundred dollars per person. In my opinion (and my wife's) it was worth it for the food quality, vacation memories, and inability to have a similar experience close to our home town. Thank you to everyone at Taniere for making such a wonderful memory for us while visiting Quebec City.

It was my first time on a gastronomic experience restaurant. It was amazing! The atmosphere is charming, service is very knowledgeable and on point with our needs, food & wines... excellent! We had the experience menu and it is about 10 courses of small dishes perfectly presented and paired with wines (if you select the wines menu). Keep in mind this is a gastronomic experience, you come to enjoy the flavors and value the quality of ingredients. Each time they bring a dish, they explain what it is and the origin of the ingredients. Most of the ingredients are from Quebec or Canada. Wines are from around the world. They tasted amazing! I appreciate they really made an experience and addressed our special requests, also they personalized our places with a welcome note and at the end provided with a souvenir menu. I really recommend it if you are looking for a memorable experience :)

This was best restaurant experience I’ve ever had in Canada! It’s also the first restaurant that I have been to where I’m not seated at the same table all throughout the night. IN LOVE WITH THE CONCEPT! On the day of your reservation, you’ll receive an email or text message of the secret code to enter the restaurant. Upon entrance, the host will be waiting for you at the bottom of the staircase. She greets you by your/your guests’ names! (How did she know it’s me?? ) The food was phenomenal. It’s so creative. They also used lots of local ingredients from Quebec, and tied it back to the history of Quebec. We got the Non-Alcoholic pairing. OMG All of the drinks were so cool. There was even an non-alcoholic champagne! Every pairing contained some main ingredients of the course, even if some pairings sounded strange, they all tasted really good! The tasting was $190/pp with +$85/pp for the Non-Alcoholic pairing.

Cette soirée à la Tanière nous laissera un souvenir impérissable. Ce restaurant est une merveille! - Le décorum et la mise en scène décuplent le plaisir - les plats sont tous plus surprenants et délicieux les uns que les autres. - l'accord mets/vins est divin - Le fait de changer de salle pour les plats puis pour le dessert est une idée originale et l'ambiance de chaque salle est différente. - si je dois mettre un seul petit bémol : attention aux "amuses gueules" , les assiettes sur lesquelles elles sont servies sont tellement somptueuses que la minuscule bouchée paraît bien petite sur son écrin. En conclusion, la Tanière restera pour nous une des 3 plus belles expériences culinaires de notre vie de gourmets! Bravo à toute l'équipe, du chef jusqu'au petit commis!!!!

Great atmosphere, even better service! That said, be prepared to leave hungry! After spending just under $1,000. It was a 12 course meal, that dragged on over 3 hours and honestly each course works out to be about a tablespoon/course! We were so hungry by the end. So, just under a $1000 later, we literally walked out of the restaurant and into another one 2 blocks away to get a pizza and a poutine as we were starving! It’s too bad that they’re focusing too much on the art and forgetting that people still need to leave hungry . Especially after you spend that kind of money!

What an experience! We were recommended this restaurant from our the staff at Fairmont Le Chateau who raved about this location. They dubbed it a "must when visiting QC." We were not disappointed at all. From the moment we walked into the door we felt emersed in the experience. The staff was friendly, professional, & took the time to talk with us throughout the night. The food was incredible with tastes we have yet to experience at any other restaurant. I do not want to give too much away, however if you have the opportunity to enjoy this unique experience, please do! Thank you to the staff at Taniere who made our special trip to Quebec City a memorable one.

What an outstanding experience! I arrived with high expectations, and Tanière delivered way above. The food and non-alcoholic pairing provided two parallel tracks of discovery. All the textures, flavors, smells, and visuals provided the opportunity to explore the senses and at the same time everything, no exception, was delicious. Adding to that, the building itself is of historic interest, and as you progress through the meal you'll be taken to different rooms, and that's just brilliant. The menu changes seasonally, so this one goes to my list of great places to visit again when the opportunity comes.

Absolutely incredible. It’s more than a meal out, it’s a whole experience. Stunning food, wine and ambience. Every ingredient and wine pairing had intention and purpose. The services were extremely well executed. The staff worked extremely well together and were knowledgeable and friendly. The entire evening had the flow and creativity of a performance. They were excellent with my shellfish allergy and the replacements were equally as amazing. The food kept coming and we were so full by the end of the night!! J'ai absolument adoré mon expérience à La Tanière! De l'entrée dans le bâtiment jusqu'à la sortie. Les employés sont accueillant et j'adore le côté historique et brute du décor et des plats. Que dire des plats, mes papilles gustatives n'ont jamais été aussi heureuse! Tout était délicieux et il n'y a aucun met que j'ai moins apprécié. Parlons maintenant du décor, magnifique. La salle de bain? WOW! Même le savon à main sent si bon que j'ai voulu aller me laver les mains 10x pendant la soirée! Blague à part, c'était une soirée inoubliable et unique. Merci à toute l'équipe!

In my humble opinion, la Tanière now positions itself as the best restaurant in Quebec city right now. The decor is breathtaking and the waiting staff really went above and beyond to ensure that our night was magical. I took the premium wine pairing , and it was definitely money well spent . The wine pairing was one of the best i’ve ever had, with private imports that really were extraordinary. Lastly, but not the least, the food. The taste was of course perfect , but what really stood out was the attention to detail and the unique presentation of the meal. In a nutshell, it not only is a must-go in Quebec city, but in the Quebec province as well.

Restaurant Tanière is a Must Dining Experience. The food presentations were incredible. The food were excellent. Although the portions were small, we were actually satisfied at the end, not leaving hungry. It's pricey, but worth the Experience. If you're looking to get stuffed, this might not be for you. The servers were incredibly knowledgeable of each food presentations & were great & very attentive. We've been to Per Se in NYC, & Tanière is definitely up there

Nous y étions en février pour souligner nos 20 ans de vie commune. Quelle expérience!!!! C’est à vivre une fois dans sa vie. Nous avons pris l’expérience totale et cela en a valu la peine. Au montant que cela nous a coûté en prenant l’expérience totale 1300$. Tout était plus que parfait et de passer d’une pièce à l’autre selon le service est génial. Même pas été capable de manger notre dessert. Merci à la formidable équipe pour la belle soirée.

À chaque visite, nous sommes toujours aussi épatés par l'expérience gastronomique incroyable que la Tanière nous offre. Exquisite! A very special occasion, once in a lifetime dining experience. You move through three vaults over the many courses of your meal. The food was delicious and they were able to accommodate a vegetarian menu. Even more impressive was the phenomenal service. Every single server that walked by would pay attention and do what needed to be done, be it refilling your water or refolding your napkin while you were in the restroom. This was a night that we will never forget.

Nous n'avons pas été manger au resto hier, nous avons vécu une expérience totale! J'ai vraiment rien à reprocher à ce restaurant outré que nous aurions aimé voir encore plus la brigade travailler devant nous pour préparer les plats. C'est un service payant alors je m'attendais à plus. Les chefs sont très proches des clients et nous avons apprécié ces moments avec eux pour entendre toute leurs histoires.

Great experience and good food. We did not give a 5 star because we experienced it a bit as a rush. The dishes came really fast after each other and often we did not even finish our wine and we already got a new glass of wine for the new dish. We recommend to slow down and to make some more time to make a personal talk with the guests. However, a great experience and if you like a high quality dinner, go for it!

This is a once in a lifetime restaurant experience and we’ve been fortunate to eat here twice in 3 months. You should do this. Take a loan on the house if you need to do so but do it. You will not regret it. The food is phenomenal and it changes every few months. The staff are extremely friendly and the interior is designed so well. We do the non alcoholic pairing because my wife is allergic to alcohol but I would recommend it even don’t have issues with alcohol. They get so creative with it. Love this place.

Probably the best dining experience that I have ever had. My wife and I went and did the chefs table. I did the high end alcohol pairing and she did the non-alcoholic pairing. The food was amazing and the drinks paired really well. It's definitely expensive, but worth every penny.

Very cool experience. Taniere is a true celebration of all Quebec has to offer. It was very cool to hear the history of the ingredients. I did the non alcoholic drink pairing which provided lots of interesting options, but if I returned I would skip the drink pairing. It’s as much about the experience as it is about the food.
